  • 1 head cauliflower, cut into florets
  • 1 cup cashews, unsalted
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 onion, finely chopped
  • 2 teaspoons curry powder
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)


  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss cauliflower florets and cashews with olive oil, garlic, onion, curry powder, turmeric, salt, and pepper until evenly coated.
  3. Spread the mixture onto a baking sheet lined with parchment paper.
  4. Bake for 25-30 minutes or until cauliflower is tender and lightly golden.
  5. Remove from the oven and garnish with fresh cilantro if desired.
