Cumin Spiced Quinoa Bowl


  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste


  1. Rinse the quinoa under cold water.
  2. In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is cooked and liquid is absorbed.
  3. Stir in ground cumin, paprika, and cayenne pepper.
  4. Remove from heat and let it cool slightly.
  5. Fluff the quinoa with a fork and transfer it to a large bowl.
  6. Add cherry tomatoes, cucumber, red onion, cilantro, and lime juice. Toss gently to combine.
  7. Season with salt and pepper to taste.
