Cumin-spiced Lentil Tacos


  • 1 cup dried lentils
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • Toppings: shredded lettuce, diced tomatoes, salsa, guacamole, and cheese


  1. Start by rinsing the lentils under cold water.
  2. In a saucepan, combine lentils and vegetable broth. Bring to a boil, then reduce heat and simmer until lentils are tender, about 25-30 minutes.
  3. In a separate pan, sauté onion and garlic in olive oil until translucent.
  4. Add cooked lentils, cumin, chili powder, salt, and pepper to the sautéed onions and garlic. Mix well and cook for an additional 5 minutes.
  5. Warm corn tortillas and fill them with the lentil mixture.
  6. Top with your favorite toppings, such as shredded lettuce, diced tomatoes, salsa, guacamole, and cheese.
