  • 1 cup lentils, cooked
  • 1 small cauliflower, cut into florets
  • 1 tablespoon olive oil
  • 1 teaspoon cumin powder
  • 1/2 teaspoon turmeric powder
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup feta cheese, crumbled (optional)


  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the cauliflower florets with olive oil, cumin powder, turmeric powder, salt, and pepper.
  3. Spread the cauliflower on a baking sheet and roast for 20-25 minutes or until golden brown and tender.
  4. While the cauliflower is roasting, heat a pan over medium heat. Add the cooked lentils and cherry tomatoes, and cook until heated through.
  5. Combine the roasted cauliflower with the lentil and tomato mixture.
  6. Serve the Cumin-Spiced Lentil Cauliflower Bowl topped with fresh cilantro and optional crumbled feta cheese.
