Cumin Spiced Chickpea Tostadas

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 8 tostada shells
  • Toppings: diced tomatoes, shredded lettuce, sliced jalapeños, sour cream, shredded cheese, lime wedges

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the chickpeas with olive oil, cumin, paprika, salt, and pepper until evenly coated.
  3. Spread the seasoned chickpeas on a baking sheet and roast in the oven for 20-25 minutes, or until crispy.
  4. While the chickpeas are roasting, prepare the tostada shells according to package instructions.
  5. Once the chickpeas are done, assemble the tostadas by spreading the roasted chickpeas over each tostada shell.
  6. Top with diced tomatoes, shredded lettuce, sliced jalapeños, sour cream, shredded cheese, and a squeeze of fresh lime juice.
  7. Serve immediately and enjoy!
