Creamy Mushroom Risotto


  • 2 cups Arborio rice
  • 1 pound fresh mushrooms, sliced
  • 1/2 cup dry white wine
  • 4 cups chicken or vegetable broth, heated
  • 1 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish


  1. Sauté the onions and garlic in olive oil until translucent.
  2. Add sliced mushrooms and cook until they release their moisture.
  3. Stir in Arborio rice and cook until lightly toasted.
  4. Pour in the wine and cook until it’s mostly absorbed.
  5. Gradually add the warm broth, one ladle at a time, stirring frequently.
  6. Continue this process until the rice is creamy and cooked to al dente.
