  • 2 lbs boneless, skinless chicken breasts
  • 1 can (14 oz) coconut milk
  • 3 cups chicken broth
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup baby spinach
  • Juice of 2 limes
  • 1 tsp ground ginger
  • Salt and pepper to taste
  • 2 tbsp olive oil


  1. Heat olive oil in a large pot over medium heat. Add chopped onions and garlic, sauté until fragrant.
  2. Add chicken breasts to the pot, cooking until browned on all sides.
  3. Pour in coconut milk, chicken broth, lime juice, and ground ginger. Stir well and bring to a simmer.
  4. Add diced bell pepper and let the soup simmer for 15-20 minutes until chicken is cooked through.
