Coconut Lime Tofu Curry


  • 1 block of firm tofu, cubed
  • 1 can of coconut milk
  • 1 tablespoon coconut oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons red curry paste
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 lime, juiced and zested
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Cooked rice for serving


  1. Press the tofu to remove excess water, then cut it into cubes.
  2. In a large pan, heat coconut oil over medium heat. Add onions, garlic, and ginger, sautéing until fragrant.
  3. Add red curry paste and stir for 1-2 minutes.
  4. Pour in coconut milk, stirring to combine. Bring to a simmer.
  5. Add tofu, bell pepper, and broccoli. Simmer until vegetables are tender.
  6. Stir in lime juice and zest. Season with salt and pepper to taste.
  7. Serve the curry over cooked rice, garnished with fresh cilantro.
