Coconut Lime Tofu Curry
- 1 block of firm tofu, cubed
- 1 can of coconut milk
- 1 tablespoon coconut oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons red curry paste
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1 lime, juiced and zested
- Salt and pepper to taste
- Fresh cilantro for garnish
- Cooked rice for serving
- Press the tofu to remove excess water, then cut it into cubes.
- In a large pan, heat coconut oil over medium heat. Add onions, garlic, and ginger, sautÃ©ing until fragrant.
