  • 4 Mahi Mahi fillets
  • 1 cup shredded coconut
  • 2 limes, juiced
  • 3 tablespoons coconut oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh cilantro for garnish


  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix shredded coconut, lime juice, minced garlic, salt, and pepper.
  3. Place Mahi Mahi fillets on a baking sheet and coat with the coconut-lime mixture.
  4. Drizzle coconut oil over the fillets.
  5. Bake in the preheated oven for 15-20 minutes or until the fish is cooked through and flakes easily.
  6. Garnish with fresh cilantro before serving.
