  • 1 lb large shrimp, peeled and deveined
  • 1 cup shredded coconut
  • Juice and zest of 2 limes
  • 2 tablespoons chopped fresh cilantro
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil


  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine shredded coconut, lime juice, lime zest, chopped cilantro, minced garlic, salt, and pepper.
  3. Toss the shrimp in the coconut mixture until evenly coated.
  4. Heat olive oil in a pan over medium-high heat.
  5. Sear the shrimp for 2-3 minutes on each side until they are golden brown.
  6. Transfer the shrimp to a baking dish and bake in the preheated oven for 10-12 minutes or until fully cooked.
