  • 2 cups cauliflower rice
  • 1 can coconut milk
  • 1 cup diced bell peppers
  • 1 cup cherry tomatoes, halved
  • 1 cup cooked chickpeas
  • 2 tablespoons curry powder
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish


  1. Heat olive oil in a pan over medium heat.
  2. Add diced bell peppers and cherry tomatoes, sauté until softened.
  3. Stir in curry powder and cook for 1-2 minutes.
