Citrus Infused Quinoa Pilaf


  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 orange, zest and juice
  • 1 lemon, zest and juice
  • 2 tablespoons olive oil
  • 1/2 cup chopped almonds
  • 1/4 cup dried cranberries
  • Salt and pepper to taste
  • Fresh parsley for garnish


  1. Rinse the quinoa under cold water and drain.
  2. In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed.
  3. While the quinoa is cooking, heat olive oil in a pan over medium heat. Add chopped almonds and toast until golden brown.
  4. Fluff the cooked quinoa with a fork and transfer it to a large bowl. Add orange zest, orange juice, lemon zest, lemon juice, toasted almonds, dried cranberries, salt, and pepper. Toss everything together.
  5. Garnish with fresh parsley and serve warm.
