Ingredients

  • 1 cup quinoa, cooked and cooled
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced

  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 1 orange, segmented
  • 1 grapefruit, segmented
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, parsley, and feta cheese.
  2. Add the orange and grapefruit segments to the bowl.
