  • 2 cans (15 oz each) black beans, rinsed and drained
  • 1 cup corn kernels (fresh or thawed if frozen)
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup chopped fresh cilantro leaves
  • 3 tablespoons olive oil
  • Juice of 2 limes
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • Salt and pepper to taste


  1. In a large mixing bowl, combine the black beans, corn, diced bell pepper, chopped red onion, and fresh cilantro.
  2. In a separate small bowl, whisk together the olive oil, lime juice, minced garlic, ground cumin, salt, and pepper.
