Ingredients

  • 2 cans black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1 chipotle pepper in adobo, minced
  • Juice of 1 lime
  • 8 small flour tortillas
  • Salsa and sour cream for serving

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together black beans, corn, tomatoes, cheddar cheese, cilantro, cumin, smoked paprika, chipotle pepper, and lime juice.
  3. Warm the tortillas in the microwave for about 20 seconds to make them pliable.
  4. Place a generous scoop of the black bean mixture onto each tortilla and roll them up, placing them seam-side down in a baking dish.
  5. Top the enchiladas with additional cheese and bake for 20-25 minutes, or until the cheese is melted and bubbly.
  6. Remove from the oven, let them cool for a few minutes, and serve with salsa and sour cream.
