Ingredients

  • 2 cans (15 oz each) black beans, drained and rinsed
  • 1 lb ground beef
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 2 chipotle peppers in adobo sauce, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups beef broth
  • 2 tablespoons olive oil
  • Chopped fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and garlic, sauté until softened.
  2. Add ground beef to the pot, cook until browned. Drain excess fat.
  3. Stir in diced tomatoes, black beans, chipotle peppers, cumin, smoked paprika, salt, and pepper.
  4. Pour in beef broth and bring the chili to a simmer. Let it cook for 20-25 minutes, allowing the flavors to meld.
  5. Adjust seasoning if needed. Serve hot, garnished with fresh cilantro.
