Ingredients

  • 1 cup cooked black beans
  • 1 cup cooked brown rice
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 chipotle pepper in adobo sauce, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 4 large whole wheat tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Sour cream and guacamole for serving

Instructions

  1. In a large mixing bowl, combine black beans, brown rice, diced tomatoes, red onion, cilantro, chipotle pepper, cumin, chili powder, salt, and pepper. Mix well.
  2. Place a tortilla on a flat surface and spoon the black bean mixture onto the center of the tortilla. Top with shredded cheese.
  3. Fold the sides of the tortilla inward and then roll it up tightly, creating a burrito.
  4. Repeat the process for the remaining tortillas.
  5. Optional: Heat a skillet over medium heat and lightly cook each burrito on all sides until the tortilla is golden brown and the cheese is melted.
  6. Serve the Chipotle Black Bean Burritos with sour cream and guacamole on the side.
