Chimichurri Steak with Avocado Salsa


  • 2 lbs flank steak
  • 1 cup fresh parsley, chopped
  • 4 cloves garlic, minced
  • 1/2 cup red wine vinegar
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 2 ripe avocados, diced
  • 1 tomato, diced
  • 1/2 red onion, finely chopped
  • Juice of 1 lime
  • Salt and cilantro for garnish


  1. Preheat your grill to medium-high heat.
  2. In a bowl, mix together chopped parsley, minced garlic, red wine vinegar, olive oil, salt, and pepper to create the chimichurri sauce.
  3. Brush the flank steak with chimichurri sauce and grill for 5-7 minutes on each side or until desired doneness is reached.
