  • 1 cup quinoa, rinsed and cooked
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/3 cup feta cheese, crumbled
  • Salt and pepper to taste


  1. Cook quinoa according to package instructions. Fluff with a fork and let it cool.
  2. In a large bowl, combine quinoa, cherry tomatoes, cucumber, red onion, cilantro, and parsley.
  3. Prepare the chimichurri sauce by blending olive oil, garlic, red wine vinegar, fresh oregano, and salt in a food processor.
