  • 1 cup quinoa
  • 1 1/2 cups cherry tomatoes, halved
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup feta cheese, crumbled
  • Chimichurri sauce (homemade or store-bought)
  • Salt and pepper to taste


  1. Cook quinoa according to package instructions; let it cool.
  2. In a large bowl, combine quinoa, cherry tomatoes, black beans, corn, red onion, and cilantro.
