Chili Lime Mango Salsa Chicken


  • 4 boneless, skinless chicken breasts
  • 2 ripe mangoes, diced
  • 1 red bell pepper, finely chopped
  • 1/2 red onion, finely diced
  • 2-3 tablespoons fresh cilantro, chopped
  • Juice of 2 limes
  • Zest of 1 lime
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • Salt and pepper to taste


  1. Preheat grill to medium-high heat.
  2. In a bowl, combine diced mangoes, red bell pepper, red onion, cilantro, lime juice, lime zest, and a pinch of salt. Set aside to let flavors meld.
  3. Season chicken breasts with chili powder, salt, and pepper.
  4. Drizzle olive oil over the chicken and place them on the preheated grill. Cook for about 6-7 minutes per side or until fully cooked through.
