Chili Lime Grilled Corn Salad



  • 4 ears of fresh corn, husked
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro
  • Juice of 2 limes
  • 1/2 cup crumbled feta cheese



  1. Preheat your grill to medium-high heat.
  2. Brush the corn with olive oil and sprinkle with chili powder, smoked paprika, salt, and pepper.
  3. Grill the corn for 10-12 minutes, turning occasionally, until it’s cooked and has a nice char.
  4. Remove the corn from the grill and let it cool slightly. Cut the kernels off the cobs.
  5. In a large bowl, combine the grilled corn kernels, chopped cilantro, lime juice, and feta cheese. Toss gently to combine.
