  • 1 head cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 2 teaspoons shawarma seasoning
  • Salt and pepper to taste
  • 4 whole wheat tortillas
  • Toppings of your choice (hummus, cucumber, tomato, etc.)


  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss cauliflower florets with olive oil, shawarma seasoning, salt, and pepper.
  3. Spread the seasoned cauliflower on a baking sheet and roast for 25-30 minutes until golden and tender.
  4. Warm the tortillas and assemble by adding roasted cauliflower and your favorite toppings.
  5. Roll up the tortillas, cut in half, and serve immediately.
