  • 4 large Portobello mushrooms
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella, diced
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons balsamic glaze
  • Salt and pepper to taste


  1. Clean the Portobello mushrooms and remove the stems.
  2. In a bowl, mix together cherry tomatoes, fresh mozzarella, basil, and minced garlic.
  3. Season the mushroom caps with salt and pepper.
  4. Fill each mushroom cap with the Caprese salad mixture.
  5. Preheat the oven to 375°F (190°C).
  6. Bake the stuffed mushrooms for 20-25 minutes or until the mushrooms are tender.
