  • 1 cup farro
  • 1 pint cherry tomatoes, halved
  • 1 cup fresh mozzarella balls
  • 1/2 cup fresh basil leaves, chopped
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons balsamic glaze
  • Salt and pepper to taste


  1. Cook farro according to package instructions; let it cool.
  2. In a large bowl, combine farro, cherry tomatoes, mozzarella, and basil.
