  • 4 boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella balls
  • 2 tablespoons balsamic glaze
  • 4 zucchinis, spiralized into zoodles
  • 1/2 cup pesto sauce
  • 2 tablespoons olive oil
  • Salt and pepper to taste


  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with salt and pepper, then bake for 20-25 minutes or until cooked through.
  3. In a large skillet, heat olive oil over medium heat. Add zoodles and sauté for 3-5 minutes until tender.
  4. While the zoodles cook, combine cherry tomatoes, mozzarella balls, and balsamic glaze in a bowl.
  5. Once the chicken is done, top each breast with the tomato and mozzarella mixture.
  6. Serve the Caprese Chicken over a bed of pesto zoodles, drizzling any remaining balsamic glaze on top.
