Cajun Spiced Chickpea Salad


  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • Salt and black pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 1 lime


  1. In a large bowl, toss the chickpeas with olive oil, Cajun seasoning, smoked paprika, cayenne pepper, salt, and black pepper until well coated.
  2. Spread the seasoned chickpeas on a baking sheet and roast in a preheated oven at 400°F (200°C) for 20-25 minutes or until golden and crispy.
  3. Remove the chickpeas from the oven and let them cool slightly.
  4. In a serving bowl, combine the roasted chickpeas with cherry tomatoes, red bell pepper, red onion, and cilantro.
  5. Drizzle the lime juice over the salad and toss gently to combine.
  6. Adjust seasoning if needed and serve immediately.
