Cajun Spiced Chickpea Salad
- 2 cans (15 oz each) chickpeas, drained and rinsed
- 1 tablespoon olive oil
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper
- Salt and black pepper to taste
- 1 cup cherry tomatoes, halved
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 2 tablespoons fresh cilantro, chopped
- Juice of 1 lime
- In a large bowl, toss the chickpeas with olive oil, Cajun seasoning, smoked paprika, cayenne pepper, salt, and black pepper until well coated.
- Spread the seasoned chickpeas on a baking sheet and roast in a preheated oven at 400°F (200°C) for 20-25 minutes or until golden and crispy.
- Remove the chickpeas from the oven and let them cool slightly.
- In a serving bowl, combine the roasted chickpeas with cherry tomatoes, red bell pepper, red onion, and cilantro.
- Drizzle the lime juice over the salad and toss gently to combine.
