Cajun Shrimp and Quinoa Salad


  • 1 lb shrimp, peeled and deveined
  • 1 cup quinoa, rinsed and cooked
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish


  1. Heat olive oil in a pan over medium heat.
  2. Add minced garlic and sauté until fragrant.
  3. Add shrimp and Cajun seasoning, cook until shrimp are pink and opaque.
  4. In a large bowl, combine cooked quinoa, shrimp, bell pepper, cherry tomatoes, red onion, and toss gently.
  5. Season with salt and pepper to taste. Garnish with fresh parsley.
