  • 1 medium-sized butternut squash, peeled and diced
  • 2 tablespoons curry powder
  • 1 can (400ml) coconut milk
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish


  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the chopped onion, garlic, and ginger. Sauté until the onion is translucent.
  3. Add the curry powder and stir for a minute to release the flavors.
  4. Add the diced butternut squash and coconut milk. Season with salt and pepper.
  5. Simmer for 20-25 minutes or until the butternut squash is tender.
  6. Garnish with fresh cilantro and serve hot over rice or with naan bread.
