Blueberry Almond Oat Pancakes
- 1 cup rolled oats
- 1 cup almond flour
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 2 eggs
- 1/2 cup almond milk
- 1/4 cup honey or maple syrup
- 1 cup fresh blueberries
- 2 tbsp coconut oil (for cooking)
- In a blender, combine rolled oats, almond flour, baking powder, cinnamon, eggs, almond milk, and honey/maple syrup. Blend until smooth.
- Gently fold in fresh blueberries into the batter.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with coconut oil.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
- Repeat with the remaining batter.
- Serve warm with additional fresh blueberries and a drizzle of maple syrup, if desired.
