Blueberry Almond Oat Pancakes

Ingredients

  • 1 cup rolled oats
  • 1 cup almond flour
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 2 eggs
  • 1/2 cup almond milk
  • 1/4 cup honey or maple syrup
  • 1 cup fresh blueberries
  • 2 tbsp coconut oil (for cooking)

Instructions

  1. In a blender, combine rolled oats, almond flour, baking powder, cinnamon, eggs, almond milk, and honey/maple syrup. Blend until smooth.
  2. Gently fold in fresh blueberries into the batter.
  3. Heat a non-stick skillet or griddle over medium heat and lightly grease with coconut oil.
  4. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  5. Repeat with the remaining batter.
  6. Serve warm with additional fresh blueberries and a drizzle of maple syrup, if desired.
