  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tsp Cajun seasoning
  • 1 tbsp olive oil
  • 4 large tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/4 cup sliced black olives
  • Sour cream or yogurt for topping (optional)
  • Hot sauce (optional)


  1. In a bowl, toss the chickpeas with Cajun seasoning until evenly coated.
  2. Heat olive oil in a skillet over medium heat. Add seasoned chickpeas and cook for 5-7 minutes, stirring occasionally, until they are crispy and slightly blackened.
  3. Warm the tortillas in a separate skillet or microwave.
  4. Divide the crispy chickpeas among the tortillas.
  5. Top each tortilla with shredded lettuce, diced tomatoes, red onion, and black olives.
  6. If desired, add a dollop of sour cream or yogurt and a drizzle of hot sauce.
  7. Roll up the tortillas, enclosing the filling tightly.
