Black Bean Corn Avocado Salsa

Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeds removed and finely chopped
  • Juice of 2 limes
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine black beans, corn, diced avocado, cherry tomatoes, red onion, cilantro, and jalapeño.
  2. Drizzle lime juice over the mixture and gently toss to combine.
  3. Season with salt and pepper to taste.
  4. Chill in the refrigerator for at least 30 minutes to let the flavors meld.
  5. Serve chilled and enjoy the vibrant flavors!
