Black Bean Corn Avocado Salsa
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh or frozen)
- 1 ripe avocado, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño, seeds removed and finely chopped
- Juice of 2 limes
- Salt and pepper to taste
- In a large mixing bowl, combine black beans, corn, diced avocado, cherry tomatoes, red onion, cilantro, and jalapeño.
- Drizzle lime juice over the mixture and gently toss to combine.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes to let the flavors meld.
- Serve chilled and enjoy the vibrant flavors!
