Black Bean and Corn Salsa Tostadas


  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels, fresh or frozen
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeno, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • Salt and pepper to taste
  • Tostada shells
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese
  • Sour cream for garnish


  1. In a large bowl, combine black beans, corn, red bell pepper, red onion, jalapeno, cilantro, lime juice, salt, and pepper. Mix well.
  2. Preheat the tostada shells according to the package instructions.
  3. Spread a generous amount of the black bean and corn salsa mixture onto each tostada shell.
  4. Top with shredded lettuce, diced tomatoes, and shredded cheddar cheese.
