  • 4 whole wheat pita bread
  • 1 cup fresh basil leaves, packed
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup pine nuts
  • 2 cloves garlic, minced
  • 1/2 cup extra-virgin olive oil
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella cheese, shredded


  1. Preheat your oven to 400°F (200°C).
  2. In a food processor, combine basil, Parmesan cheese, pine nuts, and garlic. Pulse until finely chopped.
  3. With the processor running, slowly pour in the olive oil until the mixture becomes a smooth pesto.
  4. Season with salt and pepper to taste.
  5. Place the pita bread on a baking sheet. Spread a generous amount of pesto on each pita.
