  • 4 large ripe tomatoes
  • 1 pound fresh mozzarella, sliced
  • 1 cup fresh basil leaves
  • 1/2 cup pine nuts
  • 2 cloves garlic
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup extra-virgin olive oil
  • Salt and pepper to taste


  1. Start by slicing the tomatoes and arranging them on a serving platter.
  2. Layer the fresh mozzarella slices on top of the tomatoes.
  3. In a blender or food processor, combine the fresh basil, pine nuts, garlic, Parmesan cheese, and a pinch of salt and pepper. Blend until smooth.
  4. With the blender running, slowly add the olive oil until the pesto reaches your desired consistency.
  5. Drizzle the basil pesto over the tomatoes and mozzarella.
