  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon paprika
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 2 cups vegetable broth
  • Salt and pepper to taste
  • Fresh basil leaves for garnish


  1. In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent.
  2. Add minced garlic, dried basil, and paprika. Stir for a minute until fragrant.
  3. Add drained chickpeas, lemon zest, lemon juice, and vegetable broth. Season with salt and pepper to taste.
