  • 2 large eggplants
  • 1 cup quinoa
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste


  1. Preheat your oven to 375°F (190°C).
  2. Cut the eggplants in half lengthwise and scoop out the flesh, leaving a 1/2-inch border.
  3. Chop the eggplant flesh and combine it with quinoa, cherry tomatoes, feta cheese, basil, and minced garlic.
  4. Season the mixture with salt and pepper to taste.
  5. Stuff the eggplant shells with the quinoa mixture.
  6. Place the stuffed eggplants on a baking sheet and bake for 25-30 minutes or until the eggplant is tender.
  7. Remove from the oven, let it cool slightly, and serve.
