  • 1 sheet of pre-made puff pastry
  • 1 cup butternut squash, peeled and cubed
  • 1 cup sweet potatoes, peeled and sliced
  • 1 cup Brussels sprouts, halved
  • 1 cup red onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup shredded Gruyere cheese
  • 1 egg (for egg wash)
  • Fresh parsley for garnish



  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface into a large circle.
  3. In a bowl, toss butternut squash, sweet potatoes, Brussels sprouts, and red onions with olive oil, thyme, salt, and pepper.
  4. Spread the vegetable mixture over the puff pastry, leaving a border around the edges.
  5. Sprinkle shredded Gruyere cheese over the vegetables.
  6. Fold the edges of the pastry over the filling, creating a rustic border.
  7. Beat an egg and brush it over the pastry for a golden finish.
  8. Bake in the preheated oven for 25-30 minutes or until the pastry is golden and the vegetables are tender.
  9. Remove from the oven and let it cool for a few minutes before slicing.
  10. Garnish with fresh parsley and serve warm.
