Ingredients

  • 2 Cornish hens
  • 1 cup apricot preserves
  • 1/4 cup soy sauce
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse and pat dry the Cornish hens, seasoning with salt and pepper.
  3. In a small saucepan, combine apricot preserves, soy sauce, Dijon mustard, minced garlic, and grated ginger. Heat over medium heat until the preserves melt and the mixture is well combined.
  4. Brush the Cornish hens with the apricot glaze, both inside and out.
  5. Place the hens on a baking sheet and roast in the preheated oven for 45-50 minutes or until the internal temperature reaches 165°F (74°C).
  6. Baste the hens with the apricot glaze every 15 minutes during the roasting process.
  7. Once done, let the hens rest for 10 minutes before serving.
  8. Garnish with fresh parsley and serve with the remaining apricot glaze on the side.
